It's the movie's excuse to reduce the battle to a gymnastics-off, instead of doing any real work and figuring out something more interesting to do with two masters of the Force.
Well, I don't pretend to have the answer to how to "fix" the scene, but to me Dooku's line, "It is obvious that this contest cannot be decided by knowledge of the Force, but our skills with a light sabre," is the misstep.
